have made my first  roquefort/gorgonzola type cheeses...first ones alreadt wrapped. Will try first one in a few weeks. Unfortunately this cheese is very good for you and thus illegal to sell to you. It is made from raw jersey cow milk hand milked with cultures added to the HEALTHY naturally existing bugs in the milk in the cow...added within a minute of milking. Your government declares this cheese dangerous and illegal while issuing motor cycle licences. I am allowed to sell disgusting frozen meals from food chains and super markets but not raw milk and certainly not happy sheep painlessly slaughtered in the paddock. I am directed to take my nice sheep to a slaughterhouse where they stun pigs through the eye. So I will just eat these gorgeous foods myself with my friends. Read about raw milk. Pasteurised milk is the perfect medium for dangerous bugs...true.Cheese made under the divine direction of my Cheese Guru.
